Does Collings always use book matched tops?
And why or why wouldn't a high end guitar maker use book matched tops.

As far as I know Collings always uses bookmatched tops. This practice seems to be pretty standard for all of brands I know about. Sometimes runout or other characteristics of the grain might make the sides of the top look different, but it's probably bookmatched anyway.
